Demonstration
of preparing poultry and meat joints by Marcus Hall to
include:
Trim and make crown of Lamb, prepare and make
liver pate, demonstrate how to truss a bird ready for roasting -
Crown of Turkey from whole bird lardon the bird ready for
roasting - Stuff Turkey thigh and make a Galantine with orange
and cranberry stuffing - Fillet trout basic all round fish with
med style salsa and lime cooked trout salad...And any other
surprise that may come up during the day

will need PowerPoint to see the whole presentation, for those of
you that don't have PowerPoint I have converted a copy to a PDF
file which you should all be able to read (the PDF doesn't
